I recall these used to be a prominent feature of peak time destinations. When were these removed? It seems this is a very useful turning point

On a similar note, do trains still stop short at Hillingdon? I recall many of the boards used to display "Uxbridge/Hillingdon" (or vice versa, I forget) and I think this was to cover all basis in case a train terminated one stop short at late notice?

The direct route from Hillingdon to the sidings was removed in a track rationalisation just a few years ago. Hillingdon is still available as a destination in the S stock TCMS/CIS though. I imagine it's still available on the Picc trains too.

Interestingly, some of the platform indicators say Hillingdon / Uxbridge still. I recall this is because the signalling system doesn't know if it's going to Uxbridge or Hillingdon?

Yes - the system cannot differentiate between them.

And four years ago I noticed the indicators on the eastbound platforms between Uxbridge and Rayners Lane saying Metropolitan Line or Piccadilly Line

And they still do, controlled by the signaller in Rayners Lane cabin.

And whilst not as precise as in other locations, for the vast majority of passengers knowing whether its a Met or Picc is sufficient. You can always change later in your journey if necessary.

Back in the 80's, four Picc trains stabled overnight in Uxbridge sidings, doing so via the east end connection. These trains started / terminated at Hillingdon.
