There appear to be 2 types of Day Travelcards, one is printed on thick card with the NR and LU symbols at the top and a pink triangle background. The other is printed on thinner card with a plain pink background and London Underground at the top, is this differenc due to where the cards are issued?

Yes, LU have always been cheapskates, even when it comes to card thickness. The NR ones last much better if you are going through a lot of barriers and have flimsy pockets! ;D

I get what appears to be a third type, which is printed on the usual orange NR ticket, but with the underground logo added at the top left when the ticket is printed. If you go to an automatic machine, it just prints Travelcard along the bottom edge.
This is probably because Cambridge is pretty far out as stations which issue day travelcards go, and can't be bothered with the hassle of loading their machines with other styles of cardboard ticket.

I've got two different desins of 1 day travelcards on the NR orange ticket stock -
one from Ealing Broadway is on a square-cornered ticket with the standard Class Ticket type etc, headers pre-printed in Orange. The word "TRAVELCARD" is printed by the machine on the bottom orange border, with the T slightly right of centre. The underground logo is printed by the machine in teh very bottom right.
the other one is from a fastticket machine at Bristol Temple Meads. It is a roundcornered ticket, the top and bottom orange borders are the same height. The top border contains teh underground logo on the left followed by "Day Travelcard". On the bottom border in samll writing is "Valid within zone(s) indicated. Not for resale" and "Valid as advertised" on the line below. These are centred in the area tot he right of the NR logo.
