Are there two different types of non-cab ends? Some of them are really dirty and have loads of tape on them, and some are much cleaner and have no tape. The panel lines/join lines also seem to be different.

1992 stock is made up of permanently coupled 2-car sets, some of which (slightly more than half) have a cab at one end, and the rest don't. There are therefore three kinds of car ends - a cab end, an uncoupling non-cab end, and a permanently-coupled non-cab end. Each individual car has a permanently coupled non-cab end, and either a cab or non-cab uncoupling end.
There is no particular reason why the two designs of non-cab end should be the same. I understand that the uncoupling ends have shunt controls, which means there are differences from the permanently coupled ends. But I suspect the principal difference in the amount of tape is whether the panels have needed repair.

Not forgetting the '49 stock on the Northern Line, which at the 'non cab' end had a shunting control behind a panel.

Perhaps I should have made it clear I was referring to the actual body panels/shell, and not any shunting controls etc

Indeed, but the internal components may affect the external construction, including where the panel joins are.

All of the cab ends had new panels fitted a few years ago, this was particularly noticeable as they were all red (so the only grey that remained was on the light clusters and 'M' door) and of course don't have any tape applied to them. Some, but not all, of the non-driving ends were replaced at the same time.
I'm unsure whether those chosen for replacement were due to their condition or for any other reasons but both the original and newer versions exist on uncoupling ends and those in the middle of units. Looking at some videos online the uncoupling ends appeared more likely to have the replacement panels - units seemed to have either all new, all original, or new on the uncoupling ends only - but that might not be the case across the whole fleet.

All the driving motor cars had replacement ends as did 'some' of the NDM cars. However, the money ran out before the job could be completed, hence there are still ends with sticky tape. However, it is believed that this will be rectified when the 1992s go for a big upgrade in time for 2020 - a large package of mods. The first two-car unit is at Acton Works now as a prototype.

I can tell you now, the two cars in Acton works need more than just cab ends haha. Its been used as a donor for so long its missing loads of stuff.
