Earlier this evening I was leaving Kings Cross and I briefly saw a guy holding a National Rail travelcard but it was two shades of blue rather than orange and yellow. I was wondering why this was.
oh And it wasn't an oyster card

It wasn't a senior railcard as he used it through the barriers like a normal ticket.

Heathrow Express uses blue tickets instead of orange and red but no idea why it worked at Kings Cross.

This would have been an odd-period season, as noted by Rich32. Extremely common to see passing through our gates. As noted, tickets from HEX may be blue also, but generally speaking these are purple with HEX branding nowadays. Not uncommon to see either - they're integrated with UTS so can act as 'point of origin' tickets to LU destinations (inc. King's Cross). The final possibility is that it could have been a Network Railcard or a Senior Railcard - again often seen as many tickets are using these for their discounts.

I think what has determined that this ticket should have printed on "Blue Stock" is the fact it is a Replacement. I don't think the period of validity has any bearing. The only time that this would be a factor is for an annual Priv Season. These were and I believe still are printed on "Grey Stock" This is in comparison to a normal passengers annual which would be printed on "Gold Stock"

Heathrow Express tickets issued from Terminal 5 are the same shape as London Underground tickets but with the Express branding, with the Oyster receipts using the same ticket stock as well. For Underground tickets and Travelcards, would they be printed on the same stock even though they are branded as Heathrow Express?

On a connected note - train companies are rolling out ITSO smartcards at present, and issuing them free of cost during the introductory period of the SEFT system. The cards may become collector's items in future years, especially as franchises change and rebrand themselves every few years.
