I've noticed a big hole in the market - There is not yet an App, which can be used to view one's real-time Oyster journey history on a phone. is there any reason why?

How do you propose that? By touching the Oyster card against the phone? Unfortunately the data on the card is encrypted and TfL do not want to tell anybody how to access the data. I know old apps that pulled data from the TfL Oyster website to tell you what you card was doing, which might be more up-to-date these days with contactless and the need for it all to be on the system quickly.
