Does someone mind explaining how the depot working thing works please?
Example:

how does one train start as one and finishes as another?

They do remain the same number all day, but the trains are entered into the depot working columns in chronological order - so if you look further, you'll see that the finish for train 357D is 0122 - this particular one seemingly being the first one out and the last one in on weekdays.

The depot working is only concerned with the working to and from the depot. It lists all of the trains that leave Stanmore sidings (or wherever) in the morning (and at other times of day, where appropriate) - and the order in which they leave - and all of the trains that enter Stanmore sidings to stable and the order in which they enter. The rolling stock working - where each train starts and finishes - is on separate pages. So all this means is that the first train to start from Stanmore sidings is train 357D and it leaves at 05 11. It leaves the road it was stabled on at 05 11 - heading, as we can tell by the timetable, for 33 rd (the shunting neck), where it arrives at 05 12. It then departs 33 rd at 05 17 and arrives at Stanmore platform 2 at 05 18½, where it forms the 05 23½ to Stratford. (We can tell by the N that it enters service at Stanmore, not Canons Park (denoted S)). Then are listed, in chronological order, all of the other trains which leave Stanmore sidings and the times they do so. Under finish, we have 355, which is the first train to arrive at Stanmore sidings. It does so from Stanmore station and arrives at 18 27. As you can tell, it then leaves again 19 47, running down to Canons Park to enter service. Then are listed, in chronological order, all of the other trains that stable in Stanmore sidings and the times they do so. You can see that 357D is booked to stable in Stanmore sidings at 01 22 and does so from Stanmore station. It is by no means necessary for a train to stable in the same place it starts from - in fact it is not uncommon to have changeover trains. It is also by no means necessary for trains to go in in the same order they come out!
