The number of trains in service at various times of day are given in the timetable as follows:

On Mondays-Fridays, over the course of the morning, 79 trains enter service: 17 from Ruislip depot, 12 from White City depot, 6 from Woodford sidings (including 1 from Woodford bay road), 34 from Hainault depot and 10 from Loughton sidings. I believe the first enters service from Loughton sidings at 04 53 and the last enters service from Hainault depot at 08 41.
At the end of the morning peak, trains start to be put away. 6 trains stable in Ruislip depot and 7 in Hainault depot, leaving 66 in service. As you can see, this is completed by 12 00. In fact, the first of these "inter-peak stablers" stables in Ruislip depot at 09 10 and the last in Hainault depot at 11 13.
These trains are then brought back into service over the course of the afternoon, giving 79 trains in service (although only for about 19 minutes between 17 35 and 17 54. As you can see, by 18 00 we are back down to 78 trains in service). The first train re-enters service for the evening peak at 14 45 from Hainault depot, the last at 17 35 from Ruislip depot.
Over the course of the evening, a further 14 trains stable - 3 go to Ruislip depot, 11 go to Hainault. This all takes place between 17 54 (train stables in Hainault depot) and 20 20 (train stables in Ruislip depot).
Then, gradually, the rest of the trains stable, with the last train stabling in Loughton sidings at 01 36.
Now then, on Saturdays, over the course of the morning, 65 trains enter service: 14 from Ruislip depot, 12 from White City depot, 6 from Woodford sidings (including 1 from Woodford bay road), 25 from Hainault depot and 8 from Loughton sidings. I believe the first enters service from Loughton sidings at 04 53 and the last enters service from Hainault depot at 08 30.
Then, around midday, a further 7 trains enter service: 2 from Ruislip depot, 3 from Hainault depot and 2 from Loughton sidings. This takes place between 11 10 (train enters service from Hainault depot) and 12 47 (train also enters service from Hainault depot). This gives an impressive 72 trains in service.
Over the course of the evening, 7 trains stable. This time, however, 2 stable in Ruislip depot and 5 go to Hainault depot. The first of these stables in Hainault depot at 18 20 and the last at 19 59 (Hainault depot again). This returns us to 65 trains in service.
Then, gradually, the rest of the trains stable, with the last train stabling in Loughton sidings at 01 36.
Finally, on Sundays, over the course of the morning, 52 trains enter service: 9 from Ruislip depot, 11 from White City depot, 6 from Woodford sidings (including 1 from Woodford bay road), 17 from Hainault depot and 9 from Loughton sidings. I believe the first enters service from Loughton sidings at 06 25 and the last enters service from Hainault depot at 09 11.
The entering of trains into service doesn't really stop here, but the timetable maintains a difference between "morning" and "late morning." The next train enters service from Hainault depot at 09 28 along with 6 other trains from Hainault depot (7 in total), 1 from Loughton sidings and 1 from White City depot. This gives 61 trains in service throughout much of the day. The last of these enters service at 11 01 from Hainault depot.
Over the course of the evening, 7 trains stable. 1 stables in Ruislip depot and 6 go to Hainault depot. The first of these stables in Hainault depot at 20 40 and the last at 21 38 (Hainault depot again.) At the end of this there are 54 trains in service.
As you can probably tell, the stabling of trains doesn't really halt. At 22 01 the next train stables in Woodford sidings and at 00 42 the final two trains stable - 1 in Loughton sidings, 1 in Hainault depot.
