I was looking outside today onto the track at acton town and saw an S stock. I checked trackernet and saw it was heading off to ealing broadway and then back the way it came.
I then saw it again as I was waiting at Acton town for a train, the headboard saying it was not in service. There were two people in the cab so I guess it was driver training.

It could have been an infrastructure test train, but with 2 people it seems unlikely

An STN was issued this week for an S stock to operate several "proving" runs to Ealing Broadway each day on Tuesday, Wednesday and Friday this week........and on Monday to Friday next week.
All trips operate out of service.

I'd hazard a guess that it is "short term notice" much like the STPs (short term plans) on the network rail system. If it is like the NR system, then it would be used to add a path to the working timetable for a train, used on a short term basis.

Actually STN stands for 'Special Train Notice.'

Well correct me if I'm wrong, but the first S7 entered service on the District line on 02/09 (same day as the Circle's, unexpected by everyone who wasn't in the know by all accounts) going back and forth between Olympia and West Ham. At some point, I don't know when, that was extended to Barking. I don't actually know (I'd be grateful if anyone could add details) how regular that path is and whether or not it's been suspended at any time but that was certainly the first and I've seen it about a few times. I saw an S7 on Thursday morning at Mile End on the west with Olympia up on the front.

D Stock are unlikely to start going until late-December/January. S7s can now run empty to/from Ealing, the branch is very likely to be signed-off for passenger working very soon, this will allow service diversions from Wimbledon to occur if required and allow more train stabling at Ealing Common depot. The Richmond and Upminster lines will follow within a few months.

So what's the plan for the Christmas 2014 meet, last ride on D stock, or will they be around for Christmas 2015?

There is still signalling modifications to take place between Upney and Upminster and a few signals still need to be sighted correctly.
