Whilst avoiding the Dircle lines today via DLR and on passing c2c trains I noticed that a DLR train for Bank seems to always say 'Not In Service' when leaving Shadwell, or least when I've been on it. Why?

At a guess, may it be something to do with the turnaround procedure? i.e. the train finishing one trip and starting to set itself up for the return trip.

I saw one car say "Not In Service" with the front one saying Lewisham at Canary Wharf yesterday a few times.

Ever since they upgraded the train software to include the audible announcements, the display software was also upgraded to reflect the former (ie. rather than just displaying "Lewisham" they now scroll: "Bank, train is for Lewisham" while sat at plat 9 at Bank).
One of the quirks of this upgrade is that once the train has pulled out of the penultimate station, it prematurely updates the external displays. For example, once a train has left Shadwell westbound and the tannoy announces "The next stop in Bank, where this train terminates. Please remember to take all your belongings with you", the external displays change to the aforementioned "Not in Service". As per the case of the original post.
This can be seen on approach to all terminus stations, but also if you happen to be walking along Marsh Wall on the south side of the CW estate, ex. Stratford trains that reverse at Crossharbour also do this. The displays change as the train is passing over the road, shortly after departing South Quay.

This can be seen on approach to all terminus stations Correction to my previous post: When approaching terminus stations where trains don't physically go out of service but merely reverse out of the platform (Lewisham, Beckton etc.) the external displays update to their next destination (approaching Lewisham = Bank / Stratford, approaching Beckton = Tower Gateway etc.)
