Why did the ELL use A Stock? I know that it used to be part of the Metropolitan Line, but so did the Hammersmith & City Line, and that doesn't/didn't use A stock?

spare A stock was available at the time and 4 car trains could run on the line.

As above and I seem to remember on St Mary's curve even though double track only one train at a time could use it as the trains were two wide to pass each other.

Yes there were plenty of spare A stock units and they appeared better suited than the 1938 stock then being offered. I don't think it was anything to do with the ELL being part of the Met. The Hamersmith and City was also part of the Met but in reality ran a very different service. The route that the H&C uses is not suitable for A stock as the trains are a little too wide for some of the route and of course too long!
St Mary's curve did require signalling modifications to prevent two A stocks passing.

John Glover, in his recent book London's Overground also stated that the A-stock for this line had to be "selected from the 'double-ended' fleet, which could be used as single four-car units, as opposed to those for which one of the cabs was not modified and hence could be used only in the centre of eight-car sets."
Also noted was that 3-car D-stock was used here from 1985-1987.

On an unrelated note does anyone know of journeys were faster due the lack of Canada water station stop?

the fastest journeys were wit 1938 stock - no speedometers!
