Has anyone ever seen any reference to passenger costs for using Crossrail? Specifically I am interested in whether or not premium pricing will apply and the use of Travelcards on the service.

Premium fares will apply between Heathrow and Hayes & Harlington, regular travelcards and Oyster pay as you go will apply to everything else I believe. Oyster will also be able to calculate that premium fare and can be used all the way to Heathrow.
I can't back this up with a source right now I'm afraid, but I'm 90% sure this is the case.

Assuming that I am still working in Soho in ten years time (?), that will make my regular trips out to Canary Wharf considerably more bearable.

I believe you will be able to use Oyster the the whole thing but be charged NR fares once your out of zones 1-6 with the premium to Heathrow.
Although it maybe tied into the replacement of the current Oyster system tech and use an ISTO based card to use outside the zonal area.
