On the Northern Line BVE route there is the constant noise of some person telling you the current station, next station, mind the gap etc which really annoys me. Can the operator turn it off in real life, 'cos it'd drive me mad!

Yes train ops can switch it off. All they have to do is press the PA button in the cab without picking up the handset.
I know what you mean as it very annoying when you've heard it hundreds of times. I had guy come up to me at Archway thanking me for switching it off.
I'd most interchanges i would make my own announcements.

Best one I heard was at Camden Town on a 59 where the op said, "Mind yer doors, mind yer luggage - and I don't mean yer wife!" Also at Morden a t/op warned boarding customers that he wasn't the first train out by saying, "If ya want a quicker journey get on that one, if ya wanna good lookin' driver stay on this one!"
