Is it to do with bridges/subways over other lines?

No, as Chris said, it's more to do with accessibility.....

Accessibility makes me think about lifts... They all have them? Or don't have them?!

Three of them have both lifts and escalators - I'm not aware that King's Cross has lifts, unless they're somewhere on the main line station or at St Pancras?

King's Cross St Pancras has various lifts around the place.
Do they all have escalators to above ground level?

<makes mental note to go and check out the lifts at King's Cross next time he's there, which probably won't be for a long time...>

At Kings Cross the lift(s?) are from the SSL lines to the new ticket hall. There's also one in the tube ticket hall, connecting both its levels with the street. There's also at least one up from the SSL ticket hall to St Pancras, several between the two levels inside St Pancras, and down to Thameslink and a freight subway in King's Cross connecting platform 8 with 2/3. Plus from the end of next year there'll be countless lifts connecting the tube lines with the Northern Ticket Hall.

Are they planning to install lifts from the current tube ticket hall to platform level, or is the lift in the Tube hall a bit of a white elephant?

As far as I'm aware the only future lifts will be between down to the northern ticket hall, between the NTH and the [extended] Thameslink interchange tunnel, and from that tunnel to the tube platforms.
The tube ticket hall lift does get you from the subsurface platforms to the KX concourse, and the street outside. There'll be a level tunnel from the northern ticket hall to the tube ticket hall, so it might come in handy for NTH->street journeys. But the lift's third level down to the TTH gateline doesn't (and probably won't ever) serve much purpose.
