How long can you stay in the system without touching out before the max fare is charged? I.e. How long can you just travel a lot of the railways without leaving the Underground\Overground\DLR\NR before any excess charges apply?

Isn't the time limit still 2 hours, regardless of time of day or start/end points? No. Variable Oyster limits were introduced a little while back, depending on touch in and touch out location, as well as time of day and day of travel.

Same Station Exits are another thing to remember, especially if you touch the oyster reader at the same station more than 30 minutes after the first but haven't touched it anywhere else during that period; you end up with a maximum fare if you do that. I fell foul of that the other day on the DLR, I touched in at Gallions Reach with the aim of a friend joining at West Ham and continuing to Stratford, but the plan changed last-minute and instead I went back to Gallions Reach without touching out anywhere. When I touched at Gallions Reach it had been more than 30 minutes so I got another touch in and maximum fare (I'd forgotten the time limit) . So I had to go one-stop to Cyprus to touch out and walked back, luckily the max fare got refunded at North Greenwich ticket office without any questions .

Hmmm, just thinking about the finite times makes me remember the time when me a family and friends were on the second weekend of the steam running at Great Portland Street, one of us decided to buy a paper ticket to avoid Oyster overcharging instead. If they phase out paper tickets in favour of Oyster and still run these events, it may be a wonder if people would still be able to see the trains.

This is welcome, as in the days of a 2-hour maximum journey one trip from Debden to Chorleywood took me 2 hours 1 minute due to just missing a train at Debden and minor delays in the city.

Would it be possible to do Hammersmith H&C to Edgware Road H&C by going all the way around the Circle without going over the Oyster time limit? According to Journey Planner, it would take 72 minutes, and the page quoted above states that 110 minutes is the maximum on a Saturday. Am I reading it correctly?

For the small numbers of people who want to spend all day on the Underground collecting numbers of whatever it is that floats their boat, I really can't see why they can't be allowed to get on with it. The time limit should be scrapped to help them in their quest.

The timelimit is used so the system can determine when to end a journey you didn't touch out from. This means that if you are doing a simple out and return journey and forget to touch out at the end of your first leg then your second leg will work correctly.
At stations with barriers it would be just as logical to say that an unfinished journey is completed when you start the next one, indeed it wouldn't surprise me if that happens. However, that doesn't work with the standalone readers on the DLR (and elsewhere), which cannot tell whether you are entering or exiting other than by the state of your card. If you didn't touch out at the end of your first journey and the timelimit didn't happen then it would touch you out when you intended to touch in. You would then be travelling without a ticket. That's not to say that something else would not be better, but you do need something.
For the enthusiast who wants to spend an extended time on a station, how about setting a platform ticket product for oyster that is only issuable by the station supervisor? You therefore need to speak to them, they set the ticket on your oyster and that completes your journey and signs you in to the station. When you want to leave, you see the station supervisor again who completes the platform ticket, which signs you out from the station and starts your journey from the station. If your last touch before or first touch after a platform ticket is a normal barrier at that station then you don't get charged (e.g. Debden - Liverpool Street £3.00, Liverpool Street platform ticket £0.20, Liverpool Street - Liverpool Street £0.00). This being officially available would remind staff that photography is allowed on stations. This is just a first thought so it would need tweaking, e.g. it wouldn't work at unmanned stations.
