The best place for number spotting is definitely not on the line.
Seriously, though, your best bet is one of the stations that is never omitted from a 'route' (the stations at either end are not always included), and where there is very fast and easy access from one platform to the other.
At least with the Victoria line you don't have to consider trains splitting for different route segments.

....amd choose a quieter station like Pimlico. No-one will love you for standing "in the way" at,say,Victoria or King's X....

There are no scheduled Victoria terminators during the main part of the day, so unless there is disruption to the service, all trains will pass through Pimlico.

Ugh...imagine spending an entire day in a deep level station; you might as well lock yourself in an oven and chain-smoke all day.

Oh come on, are you telling me if the Vic had an open-air station surrounded by leafy greenery, and with all the same spotting opportunities as Pimlico, you'd not rather be there?
