Can the doors on LU stock be released from the saloon, or do the punters have to break the glass or hit the porter buttons?

Assuming you mean the normal passenger doors, the answer is that there is NO way for passengers to open them normally. In addition the porter buttons are used to close the doors on one car, so would not assist in opening doors ;D Not sure what glass you would want to break to open the doors - the only door with glass to protect it from opening is the J door to the cabs. Even if the passengers then got into the cab, it would be VERY difficult for them to open the saloon doors, without knowing all the actions that would be needed to do so.

If there's a butterfly cock a door (or pair?) can be released, I had to do it the other week at E&C because of train stabling and track access problems.

Porter buttoons only close the doors - they're the things located at the ends of each car. What you're thinking of are the butterfly cocks which, as Tom said above, open a single door or set of doors on each car. It's possible that in the piece to which you refer is was deliberately a bit 'vague' as to how the little sweethearts carried out their dastardly deeds. After all, we don't want to encourage such actions do we?

So what are the large black buttons mounted on the inner edges of each car, above the couplings - porter buttons or butterflies? They're the porter buttons. Perhaps this image will make things clearer.....

The butterfly cocks only open the doors that run off of the particualr engine it operates. Normally it is each door leaf either side of where the cock is, regardless of whether it is a train with single or double leaf doors. There is also a way of opening one door from inside the saloon, but for safety reasons i will not say how, but it works in the same way as the butterfly cock.
